When I give people a synopsis of my life, they often look a little stressed, and I don’t blame them. I work full-time and freelance on the side, but I’m also a solo parent to three kids under 6 while my husband often travels out of state for the entire workweek.
It’s a challenge to run our bustling household, but one saving grace that keeps my head above water is shopping at Costco.
Mealtime used to be a tear-inducing struggle, not only getting it on the table, but also dealing with three very different picky eaters. Thankfully, I’ve completed my fair share of aisle mazes around Costco and found six game-changing products that have simplified mealtime, saved me stress and money, and pleased my food-discerning kids.
There’s a reason everyone raves about the rotisserie chicken at Costco.

It’s no secret that a rotisserie chicken is a go-to item for many busy shoppers, and I’m no exception.
I grab at least two of these savory birds a week. Not only are they way cheaper than preparing your own, but they’re adaptable in a variety of homemade meals. I often slice this chicken up and serve it with fruit and cheesy cauliflower rice (don’t tell the kids) for hectic, homework-packed nights when I don’t want to spend time hovering over the stove.
On the occasions I do have some time for freezer-friendly meal prep, I also use the delicious meat in dishes like chicken and dumplings, enchiladas, quesadillas, and chicken pot pie.
I love this affordable sauce for 20-minute meals.

Good marinara is a lifesaver in our house, and Victoria White Linen Marinara has a flavor that my whole family loves.
A day or two a week, I pull out a big jar of this sauce and serve it with pre-made meatballs (frozen or homemade) or pan-grilled chicken cutlets topped with mozzarella and Parmesan. My kids always ask for seconds.
I used to buy Rao’s Homemade Marinara, but this sauce is just as delicious, and I get more of it for a lower price.
Kirkland Hummus Cups are my secret weapon for getting kids to eat their veggies.

The best way to get my oldest child to try greens and other veggies is to pair them with a dipping sauce. That’s why at lunch or dinner, I’ll often add a hummus cup, which Costco sells in packs of 20. With one of these, it’s easier to get my son to try things like carrots, roasted red pepper, and zucchini.
He isn’t always keen on the produce, but I sleep easier knowing he’s at least getting extra nutrients in with the creamy hummus. It’s a good source of protein, fiber, and healthy fats, even if it’s paired with tortilla chips. I also love that it’s a low-lift for me.

More often than not, breakfast is taken on the go. Though these Stonyfield yogurt packs aren’t necessarily cheap (they’re a little over $1 a serving), they’re very filling and don’t contain any artificial flavors or preservatives, which can be hard to find in most mainstream yogurts. My kids also love the subtle flavor that isn’t too sweet.
I stock up on this healthier ramen that goes way beyond soup.

Ramen is a staple in our family diet, but I’m careful not to rely on a brand that is overly salty. Lotus Foods Millet and Brown Rice Ramen Noodles fit the bill, and they’re made with brown rice and millet, which provides a punch of fiber and protein.
I use these easy-to-prepare, healthier noodles in everything from 15-minute stir-fries to impromptu side dishes, and even top them with a fried egg for a quick and easy breakfast.
My kids are usually pasta-averse because of the texture, but this easy-to-digest ramen has been a huge success for us.

I make an incredible homemade tikka masala, but it takes time and attention that I don’t always have. Thankfully, my kids are just as satisfied with Sukhi’s Chicken Tikka Masala.
Even if your kids are super picky about unfamiliar flavors and ingredients, this is a dish that I always recommend to my friends. It’s a solid option because it’s rich in buttery flavor without being too overwhelming with spices.
The creamy tomato sauce and tender chicken bites make this dish a great starting point for exploring more exotic flavors as your child’s palate and curiosity expand. Plus, it’s easy to prepare — just heat and serve.
